My sugestion is that when you put a egg in a dispenser, when restone or a button active that dispenser, when it drops the egg, the egg that is projected from the dispenser act like in the player hands and transform in the monster of the contain of the egg. thanks in advice, i hope some plugin devoloper take my ideia. Sry for the bad english. PS: I know that this feature will be avaible in the 1.2 minecraft version, but it can take a little time to release. And i think a plugin like that will take within 2hours to make.
