   I'm looking for a way to see if a player right clicked on a mob and then open an inventory.
   
   How would this be achieved using EventHandlers?

   Read through the Event API Reference.
   And use the PlayerInteractEntityEvent.
   
   Then open the inventory.

   Thank you, I did read through the API Reference but I forgot to check the player package in Bukkit.
