I've got servers running on Ubuntu server 10.10 and 10.04, both 64bit (but one can't seem to get more than 3gb ram)

well if you use windows, ATLEAST use a windows server os, instead of the normal platform.
the normal platform just fails when hosting :/
Windows server 2008 is a clean, slick server os.

Its a difference if a minecraft server can use 2 gb or 3,8gb of ram, if you got 4 at all.
So i decided to use Debian Squeeze without desktop.
So theres is no need for a mouse, keyboard, sound, graphics, monitor etc.
Saving some bucks every month for spending in new hardware.
Iam able to remote control it via windows, iOS, linux or any other pc from everywhere.

So its up to you, to decide.

Ubuntu 11.04 64 bit, I found the ubuntu server install fast easy and reliable, I then install xubuntu desktop which is the xfce for ubuntu so I can use nx no machine to remote in and control the server via a detachable full desktop application.

    Same here.

I used to run on windows 7 with a RAM disk. Without it lag was horrible.

Once I switched to Ubuntu I've been lag free.

I'm planning on switching to arch linux. Anyone run a server on that?
