   I was thinking of writing an item trading plugin. It would work by a command that defines the player to trade with and what they offer. The other player would then either send an offer back for the item defined or deny it. After that they would both be required to accept the trade, and the trade would go through only if they both accept.
   
   Has anyone already made something like this? I don't want to tread on a plugin that's already been made.

   I do believe there is a plugin like that. Try searching trade into the plugin list website.
