I know what you mean, but this is not possible as far I know.. That means every ever created pickaxe has to be listed somewhere to add value. It is possible but if you use this for a high populated server I would not recommend it, If you still want it that way, I could give it a try. Respond here
It is possible, and not too hard using item attribute values that will do nothing in most cases (horse jump strength or zombie reinforcements) and hiding them from being shown on the item. This works especially well for tools since they can't be stacked, and not as well for stackable items because you'd need them to be the same to stack. In any case you would need to either have stats in a form of data on the item, or have sort of a UUID coded on the item through the attributes, and then more stats (diamonds mined etc) gotten from a data file.
