   Hey guys, how do i set a specific(One) player a custom color chat with Essentials? or Anything?
   I can't seem to find it anywhere

   You would need to use some sort of groups plugin like GroupManager or PermissionsEX. You would either need to configure a custom prefix / suffix (depending on what you're trying to accomplish) for that person.
