What I want: I'd like a plugin that renames specific items with specific names. I'm running a server with many items that are other things.

Actually, if you don't mind asking about a resource pack, you can edit the language files to rename what the items themselves are, along with all mobs, death messages, and pretty much every plain text area in Minecraft.

Resource Packs can do this though. Editing the .lang file is in fact even more resource friendly for your Server than a plugin for this.
