Very boring to play with only one pig, sheep .... Saw a mod for single player, which adds a variety of animals (horses, rabbits, tigers,bears ...) and really wanted to put it all on the server. Perhaps this is done?
I think it is possible. mayby. but the only thing is, all your users would have to mod their client too, or else they will get disconnected.
It would require editing the outgoing packages, and a modded client mod so the animals are server-based, instead of client
It is NOT possible since it's clientside, you would have to create your own launcher and so on, meaning others can join you server.
It is possible I don't understand why you guys keep saying this. In order for new recipes and animals/monsters to work in mulitplayer 2 things need to happen. 1. The server needs to have the content mod installed, 2.The client needs to have this installed as well. I have a SDK multiplayer server that works just fine, that is NEW content. And I have spoken with the creator of MO' Creatures who is planning on developing his with SDK. The problem here is that at the moment people are going to have to pick which is more important to have. A mod that adds new monsters/recipes or a wrapper that lets you add plugins that do interesting things. I don't know why we cant have both?

Possible, yes. Will anyone do it? Doubtful. None of the developers like making server-side mods that rely on client-side mods.
creation of the client with the mod is not so hard, just a couple of minutes. I make readya client who will make a plugin?
That's not the problem. The problem is that distribution of the Minecraft jar files is illegal so they can't simply hand out the client, that and that they don't want to cause the inconveniences of every user having to download and install the mod client-side. It's too much hassle for everyone, really. I just hope that some day Notch will make it so the client can download and use files from the server upon joining, much like how the source engine games by Valve work.
